Jicama,often available in supermarkets, is a sweet, nutty root vegetable common in Mexican and South American cuisines.Jicama can be eaten raw or cooked and should be peeled just before using . 1.Slice the jacama in half through its equator. 2.Use a paring knife to peel the brown outer skin. 3.Place each half flat-side down on the cutting board and slice into half circles 1/8 inch thick. 4.Stack the half-circles and slice lengthwise into thin matchsticks.
