Rind is also known as peel or skin. This forms the covering of the fruit. Rind includes two parts- outer skin and the white pith inside. The outer skin is rich in tangy flavor whereas the white pith is very bitter and unpleasant. In other words, the peel or rind refers to the entire skin—both the colorful outer portion and the bitter white pith that lies right beneath it.
