Dried legumes and their edible seeds are known as pulses. They are valuable additions to a modern diet because of their good taste, convenience, ease of use and nutritional role in managing and preventing diabetes. They are eaten either whole (with the skin still intact) or split in half (with or without skins). Pulses provide protein, complex carbohydrates and several vitamins and minerals. Like other plant-based foods, they contain no cholesterol and little fat or sodium, they also provide iron, magnesium, phosphorus, zinc and other minerals.

Peeling Mangoes
Mangoes are notoriously hard to peel,owing to their odd shape and slippery texture.Here's how we handle this tough kitchen task.This method ensures long, attractive strips of fruit.
1.Start by removing a thin slice from one end of the mango so that it sits flat on a work surface.
2.Hold the mango cut-side down and remove the skin with a sharp paring knife in thin strips, working from top to bottom.
3.Cut down along the side of the flat pit to remove the flesh from one side of the mango.Do the same on the other side of the pit.
4.Trim around the pit to remove any remaining flesh.The mango flesh can now be chopped or sliced as desired.

Tips for Greening up Your Plate
Check out the prewashed department. In addition to prewashed lettuce and other variations (the darker the green, the better), grocery stores now carry prewashed broccoli florets and cut-up celery. Who says crudités are just for parties? Toss some ranch dressing in your lunch box, along with prewashed veggie chunks, and it's a perfect desk nibble or snack.
Don't forget the fresh herbs next door to the prewashed greens. Make pesto (mashed olive oil, garlic, and basil leaves) and spread on crusty bread and pop under the broiler.
Toss some fresh tarragon on asparagus, drizzle with extra virgin olive oil, and roast at 400 degrees for 15 minutes.
When you finish eating, banish that garlic mouth by eating your parsley garnish. Parsley is surprisingly full of nutrients.
