Protecting the Rim of Pie Dough
The fluted edge on a pie can burn in the oven because it's so exposed. Many recipes suggest piecing together strips of foil to fashion a protective cover for the edge .Instead of trying to twist pieces of foil together, we prefer to use a single sheet to use a single sheet to cover the pie edge.
1.Lay out a square of foil slightly larger than the pie.Fold the square in half to form a rectangle.Cut an arc that is roughly half the size of the pie.
2.When you unfold the foil, you will have cut out a circle from the middle of the sheet. This open circle exposes the filling, while the surrounding foil covers the crust.

Going for local
Buying seasonal, local food is a boon for the environment for a lot of reasons. Since most food travels many miles to reach your table (1,500 miles, on average), locally sourced food cuts back on the climate-change impacts of transportation. Local food also generally uses less packaging, is fresher and tastier, and comes in more varieties. It also supports small local growers and lets them get more for their produce by not having to spend so much on packing, processing, refrigeration, marketing, and shipping.
